1 refrigerated pie crust
18 ounces Frozen Paradise Meadow Plump & Moist Cranberries
1 cup plain Greek yogurt
1/4 cup sugar
1/4 cup flour
1/8 teaspoon salt
or vanilla ice cream
Preheat oven to 450°F. Line a 9 inch pie plate with the single pie crust.
Bake pie crust for 10 minutes. Remove from oven and let cool. While pie crust is cooling, allow frozen cranberries to thaw 15-20 minutes.
Preheat oven to 350°
Mix together the Greek yogurt, sugar, flour and salt. Add the semi-thawed cranberries and stir. Transfer filling to pie crust and spread evenly. Cover with foil and bake for 1 hour. Remove foil and continue baking for 10 minutes. Remove from oven and let cool for 2 hours. Serve with a dollop of whipped cream and a generous dusting of powdered sugar or top with a scoop of vanilla ice cream.
