Cranberry Orange Bread

Makes one 9” loaf


2 cups flour
1 cup granulated sugar
Finely grated zest of 1 medium orange
1 ½ teaspoons baking powder
½ teaspoon baking soda
1 teaspoon salt
¾ cup freshly squeezed orange juice, about 2 medium oranges
1 egg, well beaten
2 tablespoons unsalted butter, melted
1 teaspoon vanilla extract
1 ½ cups Paradise Meadow® fresh or frozen cranberries, coarsely chopped
½ cup of walnuts or pecans, toasted and coarsely chopped (optional)


Preheat oven to 350⁰F degrees. Grease a 9”x5”x3” loaf pan.

Whisk together the dry ingredients including zest in a large bowl. Next, add the juice, melted butter, egg, and vanilla and stir to combine. Fold in the cranberries and nuts until evenly dispersed. Pour this batter into the prepared loaf pan and bake approximately one hour or until a toothpick inserted in the center comes out clean. Cool for ten minutes on a wire rack and then remove from pan. Cool completely before slicing.
