For how long should I cook fresh cranberries?

Cranberries should be cooked only until they pop. Otherwise, they not only begin to turn to mush, but they also turn bitter.

How can I use less sugar in my cranberry sauce?

To help neutralize the acid, add 1/4 teaspoon of baking soda when cooking cranberries. You'll find you will need less sugar.

How many cups of fresh cranberries are in a typical bag?

One 12-ounce bag of fresh cranberries will yield about 3 cups whole or 2-1/2 cups chopped.

Can I use a food processor to chop cranberries?

Yes, cranberries are easily chopped by pulsing in a food processor.

How do I store fresh cranberries?

You can store them right in the bag you bought them for about two weeks in the refrigerator. You can also wash and store fresh cranberries for up to two months in a tightly-sealed plastic bag or container in the refrigerator. As with all berries, if one starts getting soft, it will quickly spread to the rest. Be sure to sort out the softies if you plan on storing them for any length of time.

How do I freeze fresh cranberries?

You can freeze them in the bag you bought them in for one year.

How do I thaw frozen cranberries?

Frozen cranberries need not be defrosted before using.

How do I store sweetened dried cranberries? Should I put them in the refrigerator?

Sweetened dried cranberries should be stored in a cool dry, place such as a cupboard and consumed before the date on the bag. DO NOT put them in the refrigerator.

When baking, toss the cranberries with flour before stirring them into the finished batter to keep them from sinking.

Can I use a bread recipe to make muffins?

A bread recipe will yield approximately 1 dozen muffins. Reduce the baking time to 25 – 30 minutes.

Can I make my own buttermilk?

For every cup of milk, add one tablespoon lemon juice or vinegar and let it sit for about ten minutes before adding to recipe.

What can I do if I don’t have any powdered sugar?

You can make your own by running some granulated sugar through a coffee grinder or food processor.

What can I do if I don’t have baking soda or baking powder?

If you have soda, but need powder, use 1 part soda to 2 parts cream of tartar to replace. If you have powder but need soda, use twice as much, but omit the salt from the recipe.

Does the size of the eggs I use for baking matter?

Purchase large, not small, medium or jumbo eggs for baking. Most recipes, unless otherwise specified, call for that size.

How can I get all of the sticky ingredients out of my measuring cup?

Measure out oil first before ingredients like honey or peanut butter — which helps them not stick to the measuring cup. Or you can give the cup a quick spray with Pam.

Why should I use room temperature eggs when baking?

Using room temperature eggs in your recipe will help them better incorporate into the rest of the ingredients.

How much zest and juice does a lemon have?

One large lemon will yield about 3 to 4 tablespoons of lemon juice, and 2 to 3 teaspoons of lemon zest.

How can I quickly and easily clean up a broken raw egg?

If you drop a raw egg, liberally cover the mess with table salt, which will make the egg clump and be easier to clean up.

How do I get only half of an egg into a recipe?

If you're looking to halve a recipe that calls for an odd number of eggs, add all the eggs except for one. Beat the remaining egg separately and pour half the mixture in, so you get an equal amount of yolk and white.
